Lavender Shortbread Cookies
Why I Love This Recipe
Savannah, Ga. is my favorite place ever... and I mean ever. My mom went there for a trip without me once and returned with a cookie just like this. I promptly forgave her for ditching me for Savannah. As soon as I tasted that cookie I knew that I needed it in my life, so I came up with this simple and incredible recipe.
Ingredients You'll Need
2 sticks of unsalted butter, room temperature
2/3 cup of powdered sugar
1/2 teaspoon of vanilla
2 cups of flour
2 tablespoons of lavender buds
1/4 teaspoon of salt
In a standing mixer, cream the butter until smooth.
Add powdered sugar to butter until combined.
Add vanilla and mix until combined.
In a separate bowl, whisk together the flour, lavender, and salt.
Slowly add flour mixture to butter mixture, mix until incorporated.
Place dough in a large freezer bag, and into the refrigerator for 1 hour.
After 1 hour, preheat oven to 325.
On a floured surface, roll out dough to about 1/4 of an inch thick.
Cut dough into desired shapes and place on a cookie sheet.
Bake for 20 minutes, or until slightly golden.
After they're done baking, let them sit on the baking sheet for about 5 minutes then transfer to a cooling rack.
