Why I Love This Recipe
This is a mainly dish cooked for New Year dinner, it has a meaning of prosperity and progress when consuming this for the coming year.

Ingredients You'll Need
2 pork tenderloins (approximately 1 pound each)
4 cooking banana portions
4 medium potatoes washed with skin
4 medium purple sweet potatoes washed with skin
1 medium onion, chopped in very fine sticks
½ lettuce, chopped in very fine slides
1 big tomato cubed
dash black pepper
pinch of cumin
salt
2 teaspoons of olive oil
100 grs of water
1 sprig of rosemary
2 roasted chili peppers (aji panca en vaina)
1/2 teaspoon minced garlic
Directions
Aji preparation
In a blender put the onion and roasted chili peppers with warm water then blend all the components.
Mix the pork with pepper, salt and cumin then add the chili peppers’ preparation in a bowl, then let the prepared pork rest in the refrigerator for at least 2 hours.
Pre-heat the oven to 350 F.
Grease a casserole dish or oven pan that has a lid, and place your pork and add the rosemary over there.
Cover your pan and Slide into a 350 degree oven for approximately 45 minutes, or until the pork is well done.
Grease a casserole dish or oven pan and place your potatoes, sweet potatoes and banana and bake it the oven for approximately 30 minutes.
Meanwhile, prepare the salad, mixing the lettuce, tomatoes and onions in a bowl with salt and olive oil.
Serve the pork with salad, potatoes, sweet potatoes and banana.
