"Light cake made in Food Processor"

Why I Love This Recipe

This makes a beautiful light cake and is so easy as you prepare everything in the food processor.

You can also substitute the lemon for other citrus.


Ingredients You'll Need

2 medium lemons
125g butter (melted)
2 eggs
1 1/2 cups flour


Directions

Preheat the oven to 180 Deg Celsius
Prepare a 20-25cm cake tin with baking spray - I've also done this as muffins.
Blitz the washed, quartered lemons (remove the pips before you put in processor).
Add the butter, sugar and eggs to the lemons and combine well
Add the Self Raising Flour to the mixture and blend until the mixture just comes together
Pour into the prepared tin and bake for 30-40 minutes - always checking early to ensure it does not overcook. I have a hot oven so only took 20 minutes for muffins.
Remove from the oven to cool for 5-10 minutes
Remove cake from the tin to a wire rack and cool completely before icing.
For a quick lemon icing; mix 1 1/2 cup icing sugar, 2 tbsp lemon juice, vanilla, 1 tbsp butter together and spread on cooled cake. If 'gluggy' add a bit of water (1 tbsp at a time).
