Ingredients You'll Need
6 Tbs butter
1 cup sugar
1 1/2 grated lemon peel
2 eggs
1 1/2 cup flour
1 tsp baking powder
1/2 tsp salt
1/2 cup milk
1/2 cup chopped pecans
Directions
Preheat oven to 350F
Grease mini muffin pans
Cream butter and sugar and add grated lemon peel
Add eggs and blend well
Stir in dry ingredients and milk
Add nuts
Put approximately 1 tablespoon in batter in each muffin
Bake for 18 minutes
Cool slightly
Remove from pan
