Why I Love This Recipe

One of my older brothers is a food stylist! He's always finding awesome recipes!! He's a nut for anything lemon so I knew this one had to be great!! It is!! Truly one of the best lemon bars I've ever tried!!

Ingredients You'll Need

1 c. flour
1/2 c. butter, softened
1/4 c. powdered sugar
1 c. granulated sugar
2 tsp. grated lemon peel
2Tb. lemon juice
1/2 tsp. baking powder
1/4 tsp. salt
2 eggs
Additional powdered sugar to dust bars


Heat oven to 350F.

In a small bowl, mix flour, butter and powdered sugar. Press into ungreased 8-inch square baking pan, building up 1/2-inch edge. Bake 20 minutes. Remove to wire rack.

While crust is baking, in a small bowl, beat granulated sugar, lemon peel, lemon juice, baking powder, salt and eggs at high speed for 3 minutes or until light and fluffy. Pour over hot crust. Bake 25-30 minutes or until almost no indentation remains when touched lightly in center.

Cool completely: about 1 hour. To serve, sprinkle with additional powdered sugar, and cut into squares, 5 rows by 5 rows.

Yield: 25 bars
