Why I Love This Recipe

Vanilla is the second most expensive spice after saffron, due to the extensive labor required to grow and pollinate the vanilla orchid.


Ingredients You'll Need

1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
2 tsp vanilla extract
1/2 cup milk
1/4 cup buttermilk
1/4 cup fresh lemon juice
2 tsp lemon zest


Directions

Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.


In a medium bowl, whisk together the flour, baking powder, and salt.


In a large bowl, cream together the butter and sugar until light and fluffy.


Beat in the eggs one at a time, then stir in the vanilla extract.


Gradually add the dry ingredients to the wet ingredients, alternating with the milk and buttermilk.


Fold in the lemon juice and lemon zest until just combined.


Fill the cupcake liners two-thirds full with the batter.


Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.


Allow the cupcakes to cool completely before frosting.
