Lemon Yogurt Dressing

Why I Love This Recipe
Adapted from my mom's amazing broccoli salad- this dressing can change shape and flavor depending on the herbs you add, making an tasty, quick dressing for any occasion.
Fav combos for added dill: blanched broccoli, toasted sesame seeds, cranberries and parmesan cheese
Fav combo for added basil: arugula, cucumber, lots of fresh tomatoes, thinly sliced red onion, sweet snap peas
Fav combo for added thyme: tender greens or radicchio, grated raw beet, sliced pear/pomegranate/apple, sliced radish, toasted pumpkin seeds
Ingredients You'll Need
Juice of 2 lemons
1 TBSP white vinegar
3 TBSP finely chopped dill (or substitute thyme or basil for a different taste)
3 TBSP honey
4 turns of salt
6-7 turns of pepper
2 heaping spoonfuls of mayonnaise (or miracle whip, I use calorie wise)
3/4 cup thick fat free greek yogurt
1 chopped shallot or finely chopped green onion
(Bit of butter milk or milk if needed to thin out dressing)
Stir all ingredients together, or put it in a jar and give it a good shake! I don't like putting this in a blender because I find sometimes it can puree into a very wet dressing for some reason!
