Ingredients You'll Need

3 T olive oil
1 onion, chopped
1 stalk of celery, chopped
1 cup carrots, sliced
1 T garlic powder
1 T dried parsley
1/2 tsp dried oregano
1/4 tsp ground thyme
1/2 tsp dried basil
2 tsp Kosher salt
1/2 tsp black pepper
1/2 tsp red pepper flakes
8 cups water
1 lb. dried lentils, washed


In a heavy stock pot, saute the onions and celery in olive oil over medium-high heat until they are soft.

Add the carrots and seasonings to the pot and cook for 3-4 minutes, stirring frequently.

Add the water and bring to a boil.

Add the lentils, stir, and simmer on low heat for 2 hours, stirring occasionally.
