Lentil Tacos

Why I Love This Recipe
You know, I would never of guessed how good a vegetarian taco could be.

Ingredients You'll Need
1 Tablespoon olive oil
1/2 Cup yellow onion, chopped finely
1 Clove garlic, minced and salted to taste
1 Cup dried brown lentils, rinsed
12 1/4 ounce taco seasoning
2 1/2 Cups vegetable broth
8 Taco shells
Lettuce
1 Cup Cheddar cheese
1 Medium diced tomato
1 Cup sour cream
Directions
Heat oil in a skillet over high heat; cook and stir onion and garlic until tender, about 4-6 minutes. Mix lentils and taco seasoning into onion mixture and cook and stir for 1-2 minutes. Cover lentils with vegetable broth and bring to a boil. Reduce heat to low and cover and simmer until lentils are tender, 25 minutes. Uncover and cook until mixture is slightly thickened, 10 minutes. Mash lentils slightly and then stir in salsa. Serve about 1/4 Cup lentil mixture in each taco shell and top with lettuce, tomatoes, cheddar cheese, and sour cream.
