Light Summer Pasta

Why I Love This Recipe
this is a delicious recipe i made with simple ingredients...feel free to substitute other vegetables or pastas.
Ingredients You'll Need
1 box desired pasta(i used farfalle)
2 tbl olive oil
3 cups fresh spinach leaves
2 chopped tomatoes
2 minced garlic cloves
2 cups chopped mushrooms
desired amounts of parmesan reggiano
Directions
Cook pasta in salted boiling water until it has desired bite(i like mine al dente)
While pasta is cooking..in a seperate saucepan heat the olive oil over hight heat and add the garlic
only cook for about a minute or two to avoid burning and the the spinach leaves
when they have softened and reduced in size add the mushrooms..cook for a few minutes and add the tomatoes
reduce the heat and stir every so often
drain the pasta saving about 1/2 cup of the pasta water and add it to the sauce..let the sauce cook for an additional 3-5 minutes
pour the sauce over the noodles..mix well..add lots of cheese...and ENJOY!
