Lightened Spinach Dip

Why I Love This Recipe

I found this a while ago on the internet (when I printed the recipe, the address didn't print) and we have enjoyed it so I thought I would share. I hope you enjoy it too.


Ingredients You'll Need

2 (10-ounce) packages fresh spinach
Cooking Spray
2 tablespoons minced shallots
2 teaspoons all-purpose flour
1/8 teaspoon salt
1/8 teaspoon ground nutmeg
½ cup fat-free milk
½ cup tub-style light cream cheese, softened
1/3 cup fresh shredded Parmesan cheese


Directions

1. Remove large stems from spinach; rinse with cold water. Drain. Place a large Dutch oven over medium heat; add spinach. Cover and cook 7 minutes or until spinach wilts, stirring after 2 minutes. Place spinach in a colander; drain well, pressing spinach with the back of a spoon to remove as much moisture as possible.


2. Coat pan with cooking spray, and place over medium heat until hot. Add shallots; sauté 2 minutes. Combine flour, salt, and nutmeg; add to pan, stirring well. Cook 30 seconds. Add milk and cheese, stirring with a whisk; cook until thick (about 2 minutes), stirring constantly. Add spinach; cook 1 minute or until thoroughly heated.


3. Spoon dip into an oven-proof serving dish. Sprinkle with fresh shredded Parmesan cheese. Heat in a 350 degree oven until cheese is melted and dip is bubbly, about 15 minutes.
