General Prep Tip from Lillian: it is often necessary to hold food over until serving time. Lillian recommends spraying a large baking pan with baking spray, add about a cup of water to the bottom of the pan and then arrange cooked servings on end in the pan and cover with foil. Place in low heat oven, 275-300 degrees, and the water will evaporate, and prevent the food from burning.

Ingredients You'll Need

Boneless chicken breast, 4 oz. portion per person
3-4 cups bread crumbs, mixed with 1 tsp salt, ½ tsp pepper, ½ c. parsley flakes and 1 c. parmesan cheese
6 eggs, beaten


Dip chicken pieces first in egg batter and then in bread crumb mixture

Fry in ½ cup vegetable oil (add additional oil as needed), oil temperature should be 375 degrees. Put all cooked portions on end in large greased baking pan, add 1 cup water to bottom of pan, cover with foil and keep in oven at 275 or 300 degrees. This ensures complete cooking and keeps food warm until serving time. The water will evaporate and prevent the food from burning.

Or, bake in a deep pan at 375 degrees until done, use instant-read meat thermometer, to 165 degrees internal temperature. Keep checking so the breasts don’t burn, 30 minutes.
