Lime-Cilantro Cauliflower "Rice"

A great grain-free alternative to rice!
Ingredients You'll Need
1 - medium head of cauliflower [cored]
1 - tbs of water
1 - lime [zest and juice]
1/2 - cup fresh cilantro [chopped]
2 - tbs of butter
1/4 - tsp of salt
1/4 - tsp of black pepper
Grate the cauliflower or pulse in a food processor until you get the consistency similar to rice [about 8 cups].
Put the cauliflower and water in a microwave-safe covered dish. Cook in microwave on high, stirring twice, until tender [about 11 mins].
Stir in the lime zest, lime juice, cilantro, butter, salt and pepper into cooked cauliflower until it's all combined.
