Lime Zingers

Why I Love This Recipe
I just made 12 dozen for a wedding. A big hit at the office too.
Ingredients You'll Need
2 ½ cups flour
¼ tsp. baking powder
¼ tsp. salt
1 cup (2 sticks) unsalted butter, softened
1 cup sugar
2 egg yolks
1 tsp. vanilla
2 Tbsp. grated lime rind
2 Tbsp. lime juice
Directions
Combine flour, baking powder and salt; set aside. With electric mixer, beat butter and sugar until fluffy; beat in egg yolks and vanilla.
Gradually beat in flour mixture.
Add grated lime rind and lime juice stirring well.
Preheat oven to 375º.
Shape dough into 48 balls, using 1 tablespoon dough for each.
In a small bowl, combine 1 tablespoon grated lime rind and ½ cup sugar, working rind into the sugar with the back of a spoon until well blended.
Roll balls in sugar mixture and place 1 inch apart on parchment lined baking sheets.
Bake until edges are lightly browned, 12 minutes. Cool on wire racks.
Makes 4 dozen cookies.
