Why I Love This Recipe

Here's a wonderful cookie that is well worth the time and effort to make! They are soooooo pretty! And taste every bit as good as they look. I got the recipe from a friend, Nancy, who has quite a reputation for her wonderful cookies!

Ingredients You'll Need

3 c. all purpose flour
2/3 c. sugar
3/4 lb. butter
3 egg yolks


Mix together and allow dough to rest. Divide in two, wrap in plastic wrap and cool in refrigerator at least one hour. Preheat oven to 350º. Roll out dough (thicker that pie dough height). Cut with round cookie cutters or small glass. In half of cut rounds, make a small hole in the center (or use linzer torte cookie cutters). Bake until lightly colored KEEP AN EYE ON THESE!!! After cooled, top the cookies without the center hole with jam, then dust with powdered sugar.

Nancy says, "I used parchment lined cookie sheet. - These are delicious, but very fragile!

Kay says, "I, too, opted to line my cookie sheets with parchment paper. I baked mine for about 8-10 min. And I used seedless black raspberry, seedless red raspberry and apricot jam for the filling!! These babies disappeared in NO time!!
