Lithuanian Cold Beet Soup

Why I Love This Recipe
This Lithuanian soup was a favorite of my Dad's and Brother's! So much so that my Brother learned to make this so he could have it at any time. My Gramma Monica was a first generation immigrant from Lithuania who made her way to the United States and settled in Chicago. She married an American man of Lithuanian decent, had two children (my Dad and my Aunt), divorced, and remarried a first generation Lithuanian man (my Papa).

Ingredients You'll Need
4 Jars Shoestring Beets
2 Bunches of Green Onions
6 Hard Boiled Eggs
2 Cucumbers
16 Oz Sour Cream
Salt (to taste)
2 sprigs of fresh dill, chopped
1Tsp of vinegar
Directions
Chop the tops (green part) of the green onions
Chop the boiled eggs
Mix all of the ingredients, except vinegar
Fill the sour cream container with water and add the vinegar, mix
Pour the water and vinegar mixture into the rest of the ingrediants
Add more water to cover and mix well
Chill for one day before serving
