Lo Mein

"Leftover roast pork or leftover chicken stars in this LoMein."

This recipe came about one week when I had leftover roast pork and leftover pasta. Of course, you don't have to have leftovers to make it, but when you want to make something delicious from leftovers, this recipe will serve you well.
Ingredients You'll Need
For the LoMein:
8 oz. GF thin spaghetti or rice sticks
1 T. oil
2 cloves garlic, minced
8 oz. mushrooms, sliced
1 red sweet pepper, julienned
1 onion, julienned
2 carrots, thinly sliced on the bias
8 oz. package fresh snow peas, stems removed and cut in half
1 can sliced water chestnuts, drained
2 c. leftover roast pork (chicken or shrimp)
For the sauce:
1/3 c. soy sauce or orange juice
1 T. sugar
1 T. sesame oil
1 T. fresh ginger, minced
2 T. Thai sweet chili sauce
Directions
In a small bowl whisk together soy sauce (or orange juice), sugar, sesame oil, ginger, and Thai sweet chili sauce. Mix well and set aside. In a large pot of water cook pasta according to package directions. Drain. Meanwhile heat olive oil in a large skillet or WOK over medium high heat. Add garlic, mushrooms, onion, and carrot. Cook until tender, stirring often, about 3-4 minutes. Stir in snow peas and water chestnuts and cook 2-3 minutes. Stir in pasta and soy sauce mixture. Heat through and toss gently to combine. Serve immediately.
