Loaded Mashed Potatoes

This is a wonderful recipe that can be prepared ahead and put in a crockpot until serving. Great for holidays and potlucks.
Ingredients You'll Need
8-10 medium red potatoes, quartered
1 stick butter
1 c. half and half (more if needed for consistency)
¾ c. sour cream
1 ½ c. sharp cheddar, shredded
½ -1 lb. bacon, cooked crisp and crumbled
1 t. garlic salt
¼ c. green onion, thinly sliced
Directions
Put potatoes in a large pot, cover with water and bring to a boil. Cook over medium heat until potatoes are just tender, about 15-20 minutes depending on size of potatoes. Drain potatoes and put back in pot over low heat for 5 minutes to dry out potatoes. Add butter, cut in pieces, ½ c. half and half, and sour cream. Mash potatoes using a potato masher to a slightly chunky consistency. Add additional half and half if needed for consistency. Add cheddar, bacon, (reserving a little of the cheddar and bacon for serving) and garlic salt. Taste, and adjust seasoning. Top with reserved cheddar, bacon, and green onions to serve. May be kept in a crock pot if you wish to make ahead.
