Louise Spitzer's 9 Minute Microwave Brittle

"This sounds too easy to be true! No candy thermometer?"
Serves | Prep Time | Cook TimeWhy I Love This Recipe
I have made peanut brittle for special occasions for many years, but never tried it in the microwave before, but this recipe is so simple it may become my new favorite method.
Ingredients You'll Need
1 cup sugar
1/2 cup light corn syrup
1 cup peanuts or any nut you like
1 teaspoon vanilla
1 Tablespoon butter
1 teaspoon baking powder
Directions
use large glass bowl and wood or metal spoons (this gets really hot)
1 cup sugar
1/2 cup light corn syrup
mix well and microwave for 4 minutes
add and stir
1 cup peanuts or any nut you like
microwave for 3 minutes
add and stir
1 teaspoon vanilla
1 Tablespoon butter
microwave 2 minutes
add and stir
1 teaspoon baking powder
Be careful, it will foam, pour on to a buttered cookie sheet
cool. (I put them in the freezer) Crack and eat, won't last long
Pour onto a cookie sheet and allow to cool. Break apart when set.
