MAPLE DRIZZLED APPLE MUFFINS

Ingredients You'll Need
MUFFINS:
1 1/3 c. all-purpose flour
1 c. oats (quick or old-fashioned, uncooked)
1/2 c. sugar
1 Tbsp. baking powder
1 1/2 tsp. ground cinnamon
1/2 c. milk
1/3 c. margarine or butter, melted
1/4 c. maple syrup
2 egg whites OR 1 egg, lightly beaten
1 c. finely chopped apple (about 1 medium) (you may peel the apples or not-your choice)
Pecan halves, optional
GLAZE (OPTIONAL):
3 Tbsp. confectioners' sugar
1 Tbsp. maple syrup
Directions
Heat oven to 400 degrees. Line 12 medium muffin cups with paper liners, or lightly grease bottoms only.*
For muffins, combine dry ingredients; mix well. Combine milk, margarine, maple syrup and egg whites; add to dry ingredients and mix just until dry ingredients are moistened. Gently stir in apples. Fill muffin cups almost full. Top each with a pecan half, if desired. Bake @ 400 degrees for 20-25 minutes or until golden brown. Let muffins stand a few minutes; remove from pan. Cool 10 minutes. For glaze, combine confectioners' sugar and maple syrup; mix until smooth. Drizzle over muffins. Makes 1 dozen.
*Or use 30 miniature muffin cups. Bake 10-12 minutes or until golden brown.
Muffins may be frozen. To freeze, wrap securely in foil or place in freezer bag. Seal, label and freeze for up to 6 months
