MAPLE PECAN CORNBREAD WITH MAPLE BUTTER

Ingredients You'll Need
Cornbread Ingredients:
1 cup cornmeal
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 eggs
3 tablespoons LAND O LAKES® Butter, softened
2 tablespoons firmly packed brown sugar
1/2 cup buttermilk**
1/4 cup pure maple syrup or maple-flavored syrup
1 teaspoon maple flavoring
3/4 cup chopped pecans, toasted
Maple Butter Ingredients:
1/2 cup LAND O LAKES® Butter, softened
1 tablespoon pure maple syrup or maple-flavored syrup
1 teaspoon maple flavoring
Directions
Heat oven to 350°F. Combine cornmeal, flour, baking powder, baking soda and salt in small bowl.
Combine eggs, 3 tablespoons butter and brown sugar in large bowl. Beat at medium speed until well mixed.
Add buttermilk, 1/4 cup maple syrup and 1 teaspoon maple flavoring. Continue beating until well mixed. Reduce speed to low; add flour mixture. Beat, scraping bowl often, until well mixed. Stir in pecans by hand.
Spoon into greased 8-inch square baking pan. Bake for 25 to 30 minutes or until toothpick inserted in center comes out clean.
Meanwhile, combine all maple butter ingredients in small bowl. Beat at medium speed until fluffy. Serve with warm cornbread.
**Substitute 2 teaspoons vinegar or lemon juice plus enough milk to equal 3/4 cup. Let stand 10 minutes.
