MASHED POTATO PANCAKES

Ingredients You'll Need
Mix 2 cups of left over potatoes with
2 tbsp. minced onions
1/4 cup sour cream
1/3 tsp salt
1/4 tsp pepper
2 eggs(beaten)
2 Tbsp. flour
2 slices toast crumbled into small bits
Directions
Heat 2 to 3 Tbsp. butter in a large skillet. Scoop out portions of potato mixture and shape into pancakes. Cook until browned on each side, about 5 minutes.
Serve with sour cream.
