MEXICAN ROAST CHICKEN

We love the Mexican flavors of this easy roast chicken.
Ingredients You'll Need
5-6 lb. whole chicken
½ onion, quartered
½ lime, quartered
1 T. softened butter
2 T. chilis in adobo (sauce only)
Freshly ground sea salt and freshly ground black pepper to taste
Squeeze of fresh lime juice for serving
Sprinkle of fresh cilantro, chopped for serving
Directions
In a small bowl mix together butter and adobo sauce from chilis in adobo. Spread mixture all over
Chicken. Salt and pepper chicken. Stuff cavity of chicken with onion and lime and tie legs together with kitchen twine. Place in an oven preheated to 400F or on a grill preheated to 500F. If using grill, put chicken breast side down and sear for 8 minutes, then turn over and sear 7 minutes. Turn off burners on one side of grill, lower heat, and move chicken to unlit side of grill. Continue to cook chicken for 45 -60 minutes or until instant thermometer registers 165F. Squeeze lime juice over chicken and sprinkle with cilantro. Rest chicken for 10-15 minutes before carving to serve.
