"One thing you can make w/ leftover garlic butter chicken or roast turkey or pork"

Why I Love This Recipe

One way to use up leftover Chicken, Turkey or pork :) Note: I haven't tried this recipe w/ cheddar cheese but it sounds like it might go well w/ these ingredients hmmmm note to self try this recipe w/ cheese :D


Ingredients You'll Need

1 boneless skinless leftover garlic butter chicken breast or 2 thighs per person (or turkey or leftover pork roast to equal same amount as chicken breast or thighs) cut into bite size chunks or shredded
1/2- 1 yellow cooking onions per person eating
4-6 oz of sliced button mushrooms per person eating
1/3 stalk of celery per person eating thin sliced
Opt: Bok Choy chopped, bite size chunks or thin sliced
Butter
1/3 of head of broccoli (florets only) per person eating
Opt: 1 carrot peeled and cut in bite size chunks per person eating
Opt: 1/4 - 1/2 cup frozen peas or a handful of snow peas per 3 people eating
Opt: 1/3 of head of cauliflower per person eating
1/8- 1/4 cups water mixed w/ 1/2- 1 tsp sugar and few shakes of salt
1 can cream of mushroom or cream of broccoli soup or mix 1/2 can of both per person eating
3/4 can milk per each can of soup (I use whole grass fed milk or almond milk)
Opt: 1/2- 3/4 soup cans sour cream per person eating (I use it sometimes if I have it on hand)
Salt, pepper and opt garlic powder (I use the garlic powder)
3/4 soup can instant rice per each can of soup


Directions

Cut chicken in bite size chunks (or shred) (If starting w/ fresh chicken place it in pan big enough to fill pan 1/2 way up the chicken w/ water add 1/4 tsp garlic powder 1 tsp butter aprox and salt per each breast or 2 thighs. Cook flipping over now and then until waters boiled out and chicken is lightly browned in the garlic butter)(No need to add garlic or butter when using fresh turkey just water and a couple shakes of salt will do) cut up and cover 'till needed


In another pot bring sugar water and 1/2 a stick of butter to a boil turn dwn to simmer and add brocc and opt: carrots, peas or cauliflower cook till waters boiled out and toss in remaining butter but do not brown! Take off heat and set aside 'till needed


Fry up onions, mushrooms and celery (and opt. bok choy if using it) in butter 'till soft


add soup salt, pepper and garlic powder (if using it) and stir


add milk (add sour cream if using) stir. Add chicken stir. Add brocc and /or other opt veggies and stir


Add rice stir then pour into baking dish


Cover and bake at 350F
