MINI CHICKEN ALFREDO PIZZAS
Why I Love This Recipe
I have always loved anything to do with chicken and/or pizza, and I was curious about combining the two onto an English muffin, sort of a miniature chicken pizza. This has always been one of my favorite recipes, and I would love to share it with everyone here!!
( I'd like to point out that my recipes normally serve two, but any of them can easily be doubled for more!!!)
Ingredients You'll Need
For the chicken marinade
• 1 large uncooked skinless, boneless chicken half-breast, diced
• 2 ½-3 Tbsp. balsamic vinegar
• 3 Tbsp. olive oil
• 1/2 tsp minced garlic (or to taste if you’re not that nuts about garlic!!)
• Dash of salt and pepper, or to taste
For the Alfredo sauce:
• 1/4 cup of butter
• 8 Tbsp. cream cheese
• 1 tsp garlic powder
• 1 cup milk
• 5 Tbsp. Parmesan cheese
• Dash of pepper
For the pizza crust:
• 8 English muffin halves
• Enough butter to lightly coat each slice
Mix the ingredients well and pour over diced chicken. Marinate for at least an hour.
Remove chicken from marinade, lightly coat a skillet with cooking spray or canola oil, and cook chicken on the stove at medium-high heat for about 10 minutes, stirring occasionally to ensure all the pieces are evenly cooked through.
Prepare the sauce—on low heat, melt the butter in small saucepan, add the cream cheese and stir until softened/melted.
Add the garlic powder and continue stirring, increasing the heat slightly. Pour in the milk, Parmesan and pepper; stir and cook until sauce is slightly thickened (NOTE: you can adjust the amount of milk to suit your specific consistency, however, you don’t want it too thin, or too thick--too thin and it will run right off the muffin; too thick and it’s almost like paste when the finished products come out of the oven).
Spread butter over the muffin halves; toast until edges are slightly brown.
Remove from oven, spread with Alfredo sauce, top with chicken pieces, and pop back into the oven for at least 10 minutes.
When done, I like to sprinkle them with a bit of shredded cheese and parsley, then turn off the heat and return to oven for about 30 seconds or so, or until the cheese melts….
And there’s your mini-pizza party!! ENJOY!!!
