Why I Love This Recipe
I ended up buying a lot of almond flour over the internet - and have found that using it in these shortbread cookies takes away the need for almond extract and giving the shortbread a little more "bite"
Ingredients You'll Need
1/4 lb unsalted butter
1 c sugar
1t vanilla extract
2 3/4 c flour
3/4 c almond flour
1/4 tsp salt
1 1/2 c finely chopped mac nuts
Cream butter and sugar until light yellow and fluffy, add vanilla
In another bowl, sift flours and salt on to parchment paper
Slowly beat flour into butter mixture
Add mac nuts and beat on low until dough just comes together
Dump out onto flour dusted surface and shape into a flat disk
Cover tightly with plastic wrap and chill for 30 minutes
Roll dough out into 1/2" thick and cut as desired - I stick with bars about 1"x2"
Place on cookie sheet and bake at 350 degrees for 20-25 minutes or until edges begin to brown.
Transfer to cooling rack
