Why I Love This Recipe

This is a comfort food that is particularly enjoyed on a cold and wet day. It is quick to make and usually satisfies the picky eater.

Ingredients You'll Need

2 cups macaroni
1/2 Tbsp salt
1 can (796 mL/28 oz) diced tomatoes
1 Tbsp butter
1 can (284 mL/10 oz) condensed tomato soup
Optional: 2 garlic cloves, minced
Optional: 1/4 cup onions, diced


Bring 4 litres of water with salt to a boil in a large pot. Add macaroni, stirring occasionally until water returns to a boil.

Cook at a low boil, uncovered, for half the recommended time on the macaroni package. Drain pasta.

Stir the butter into the macaroni, add the diced tomatoes and tomato soup. Let it simmer until desired consistency.

Optional: fry up the onions or garlic with the butter before adding the macaroni and tomatoes.

My grandmother made macaroni and tomatoes with butter.. it's my go-to recipe when I need comfort food. :) We don't add any of the other stuff usually. We use elbow macaroni, then put in one can of stewed tomatoes and a half a stick of butter. That's it. I wonder if being in Detroit and close to Canada is why she made this recipe. :) It's one of my favorite recipes of all time. My husband thinks I'm crazy - but it just takes me back to my childhood. Thanks for sharing!!!
