Make Ahead Mashed Potatoes

This is a recipe I've tweaked from some I've read online. Mashed potatoes are always such a hassle to have ready at just the right time when you're doing dinner for a large group (like mine) so I'm glad to have come up with a recipe that takes all the stress off that last minute prep.

Ingredients You'll Need
5 pounds of potatoes
1/2 to 3/4 pounds of butter
8 ounces of cream cheese (softened)
8 ounces of sour cream
salt and pepper to taste
Directions
Peel and cut potatoes into chunks. Cook until soft enough to mash. Do not use an electric mixer to mash, but do it by hand the old fashioned way. Continue mashing as you add the softened cream cheese, sour cream and two sticks of softened butter. Add salt and pepper to taste.
I melt the third stick of butter to pour over the top after you've put the potatoes into a casserole type baking dish. These can be made the day before to this point and placed into the refrigerator. Bake 30 minutes in a 350 degree oven or until the top of the potatoes are starting to delicately brown.
