Why I Love This Recipe

This is a very traditional South African cake/pudding. The origins of the name are murky, and there's no real main ingredient, but the method is what results in one of the most delicious deserts you will bake. Don't be put off by the pudding's less than impressive appearance - the taste will more than make up for it.

Ingredients You'll Need

1 large egg
1 cup of granulated sugar
1 tablespoon smooth apricot jam
1 cup milk
1 cup flour
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon unsalted butter
1 teaspoon vinegar

For topping:
85g unsalted butter
1/2 cup granulated sugar
1/2 cup sweet cream
1/4 cup hot water


1. Preheat oven to 350 F (180 C)

2. Grease 9 inch round glass oven-proof dish (Pyrex or similar)

3. Beat on high speed the egg, 1 cup sugar and apricot jam for 5 minutes

4. Add dry ingredients alternating with milk while beating at medium speed

5. Melt 1 tablespoon butter

6. Add vinegar to the melted butter

7. Add butter mixture to batter, beating till combined

8. Pour mixture into glass dish and cover with foil (I spray the underside of the foil with Pam in case the batter rises and touches the foil - this keeps it from sticking)

9. Bake for 50-60 minutes or until cake is evenly golden brown on top

10. Five minutes before your cake is done, in a small saucepan, heat all ingredients for the topping together over medium heat until melted (not boiling)

11. As soon as the cake comes out of the oven, spoon the topping gently over the cake, ensuring that the whole surface is covered evenly

13. Serve warm or room temperature. Can be served with vanilla ice cream or whipped cream, but is delicious on its own.
