Why I Love This Recipe

My favorite dish to make you. I know it always warms you and makes you feel all fuzzy inside.

Ingredients You'll Need

This is made in 3 steps peanut. Each step has the ingredients, so you need to read ahead.

1st step. Make the tomatoes mix.
1 can drained of roasted fire tomatoes.
5 garlic cloves crushed
1/2 red bell pepper chopped fine
1 onion, chopped small
1 teaspoon sea salt
1/2 cup of wine.
1/2 teaspoon cracked black pepper
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 cup of cut cilantro

You need to add all these ingredients in a big pot and cook them together for about 25 min. First boil, then turn way down to simmer. You can add more wine if needed for taste. By the time its done, it should look like a thick paste.
Take this out and put in a bowl.

Now..You need about a 6 lb pork shoulder. Cut these in about 1" x 1" cubes. Add about 1 tsp of kosher salt (the thick kind) to the pork. Turn the fire on the same pot you cooked the tomato mixture in, you need pretty hot at first to sear the pork, add like 2 tbls oil. Add the cut pork and brown on all sides. About 10 min? Then turn to medium heat. Keep stirring the pork so it doesn't burn.

Once it is brown on all sides (not burnt) Add about 1/2 cup of wine again, and 2 cans of chicken broth plus 2 beers. Then add the tomato mix. Add another 1/2 cup of cilantro and simmer. The liquid should be about 1 inch over all the meat If it isn't, just add more water. It does not need to be all the way full just enough so when its time to add the veggies its covered. Taste the mix and add salt if needed at this point.

Cook for about an hour. Then add 3 cut up potatoes, add a bag of carrots. Cook for another hour on low.
Once you see the meat is soft, you need to thicken up the juices. *Sometimes it can take up to 2 1/2 hours to cook.

Take about 1 cup of the juices and mix with flour until its like a paste. Maybe 2 tbls? Add this to the mix once its all cooked and turn on medium high. If it isn't thick enough, then do it again.
