Mandarin Orange Chicken And Rice

Ingredients You'll Need
3/4 lb Tyson Popcorn Chicken, Or Make
Your Own If You Have Time
1 can Mandarin Oranges
1 cup Uncooked White Rice
2 Garlic Cloves, Minced
1/2 cup Juice From Mandarin Oranges
1/2 cup Orange Juice
1/2 cup Sugar
2 Tbsp Soy Sauce
1 Tbsp Cornstarch
1 Tbsp Vinegar
1/2 Tbsp Olive Oil
1 tsp Parsley
1/2 tsp Ginger
Directions
Oven Temperature: 400°F
*Preheat oven to 400 and Spread chicken on a baking sheet foiled and coated lightly with non- stick spray
*Bake approximately 15 minutes, until warm and crispy (while chicken cooks make sauce as directed below)
*In a pan boil water for rice; cook according to package directions
*In a separate pan, heat 1/2 tsp oil on medium-high heat; add garlic and cook until just golden
*Pour in the orange juice, soy sauce, vinegar, and water; bring mixture to a boil and then add sugar and ginger
*Drain mandarin oranges over a bowl, set fruit aside; mix 1/2 cup mandarin orange juice with 1 Tbsp cornstarch until dissolved
*Add mixture to the sauce pan and continue cooking on medium heat until sauce thickens
*Remove chicken from oven and put in large bowl; add mandarin oranges and pour over the sauce; toss to coat everything
*Mound rice and serve topped with chicken; sprinkle parsley, if desired
