Ingredients You'll Need
1 1/4 cup flour
1 1/4 cup self-rising flour
2 tbsp sugar
1 egg seperated
1/3 cup iced water
1.5 kg peeled and chopped apples
1/4 cup caster sugar, extra
2 tbsp flour
2 tbsp lemon juice
1 1/2 tsp cinnamon
1 vanilla bean
3 tsp sugar
Directions
Brush a round 5cm pan, 20 cm pie dish with melted butter.
Place the flours, caster sugar, salt and butter in bowls combine well. Add egg yolk, water mix until dough just starts coming together.
Roll out 2/3 of the pastry on a lightly floured surface to a 28cm diameter dish. Line the prepared pie-dish with pastry and trim excess. Place in fridge for 30mins to rest.
Pre-heat oven to 200C. Combine apple, extra caster sugar, extra flour, lemon juice, cinnamon and seeds from vanilla bean. Lightly whisk egg whites in a bowl. Brush the base and side of the pastry case with egg whites. Place apple mixture in the pastry case.
Roll out remaining pastry on a lightly floured surface to a disk large enough to fit the top of pie. Place the edges to seal and trim excess. Brush the top with egg whites and sprinkle with white sugar. Cut 3 slits to allow steam to escape.
Bake for 20 mins. Reduce to 180 and bake for a further 30 mins or until apple is tender. Set aside for 10mins to cool.
