Ingredients You'll Need

1/4 cup chia seeds
1 cup unsweetened almond milk
1 ripe mango, peeled and diced
1 tablespoon honey or maple syrup
1/2 teaspoon vanilla extract
Sliced mango, for garnish


In a bowl, mix chia seeds and almond milk. Let it sit for 10 minutes, then stir again to prevent clumping.

In a blender, puree the diced mango, honey or maple syrup, and vanilla extract until smooth.

Pour the mango puree into the chia seed mixture and stir well to combine.

Cover the bowl and refrigerate for at least 4 hours or overnight, until the pudding has thickened.

Before serving, stir the pudding again to ensure an even consistency.

Divide the pudding into serving dishes and garnish with sliced mango.

Serve chilled and enjoy!
