Light and fulfilling snack for a hot summer day. I like that you can substitute and/or add more of an ingredient based on your taste to make the recipe your own.
Ingredients You'll Need
2 -3 diced mangos
½ cup chopped red onion
¼ cup chopped cilantro leaves
16 oz can black beans, drained and rinsed
1 lime juiced*
Salt to taste
Small jalapeno seeded and minced
Optional ingredients: small red pepper, corn, tomato
*1 extra lime is needed when adding the optional ingredients
In a bowl, combine all ingredients, let rest in the refrigerator for 10-15 minutes. Remove and taste. Add additional salt, lime juice, if needed. Can be served as a dip or a sauce on fish or chicken.
