Use as a topper for salmon or other grilled meats. Enjoy!


Ingredients You'll Need

1 ear of corn, roasted
1 poblano pepper, roasted, peeled and diced
1 red onion, roasted and diced
1 serrano pepper, finely diced (seeded if you don't want it too spicy)
1 slightly green mango, diced
1 tomato, diced
1/4 cup cilantro, chopped
1 avocado, diced
1 lemon
Salt to taste


Directions

In a medium bowl, combine all ingredients but the lemon and salt. Toss gently to combine.


Squeeze the juice of 1 lemon over the salsa and add salt to taste. Toss gently one more time.
