Why I Love This Recipe

This is a great potluck recipe, or cozy night at home recipe! Fun to make with the kids, and extremely filling!


Ingredients You'll Need

1 lb ground beef (or chicken/turkey, or venison)
1 small diced onion, diced
4 cloves garlic, minced
1 pint part-skim ricotta cheese
8 ounces shredded mozzarella cheese
¾ cup grated Parmesan cheese
2 eggs
1 teaspoon dried parsley
1 (16 ounce) jar spaghetti sauce
1 package manicotti pasta
salt and pepper to tasted


Directions

Cook ground meat until almost done, add in onions and garlic and saute a few minutes until onions begin to turn translucent


Pre-heat oven to 350; cook manicotti pasta according to box directions, except pull and drain a couple minutes sooner so pasta remains slightly firm


In a large bowl, mix together ricotta, mozzarella, and 1/2 cup Parmesan, eggs, parsley, adding salt and pepper if desired


In a 9x13, or two 9x9 casseroles cover bottom with 1/2 cup sauce.


Mix meat and cheese mixture together, blending well.
Fill each manicotti shell with mixture, and place in casserole dish. Top manicotti with remaining sauce and Parmesan cheese.


Bake 45 - 55 minutes, until bubbly, and serve


Pairs Well With

Red wine; garlic or other crunchy bread; side salad
