Mardi Gras Beignets

Why I Love This Recipe

Nothing says Mardi Gras like beignets: New Orleans’ French Market donuts. However, you don’t have to travel all the way to Louisiana to get your fix. Make your own beignets this Mardi Gras and bring the spirit of New Orleans to your home.

Ingredients You'll Need

1 1/2 cups of warm water
1 envelope of active dry yeast
1/2 cup of regular sugar
1 1/2 teaspoons of salt
2 eggs (beaten)
1 cup of evaporated milk
7 cups of flour
1/4 cups of softened shortening
Vegetable oil
Powdered sugar


In a large bowl pour in the warm water and sprinkle in the yeast. Stir together and let the mixture sit for 5 minutes. Next add in the salt, sugar, eggs, and milk. Use a whisk to combine all ingredients. Add about 4 cups of the flour and continue blending until the mixture is smooth. Add the shortening and then add the rest of the flour gradually while blending. Cover the mixture with plastic wrap and refrigerate overnight.

Now, to create the beignets, roll out dough on a floured cutting board until it is about 1/8" thick. Cut the dough into 3" squares with a knife. Heat about 3 inches of vegetable oil in a frying pan. Fry beignets in small batches until they are a golden brown on each side. Place beignets on a plate covered with paper towels. Sprinkle powdered sugar over the beignets and serve warm.
