Margo's Mango Slaw
Why I Love This Recipe
Tangy, sweet, crunchy,festive looking. This slaw is soooo healthy for you but you don't have to tell anyone that. It's a great side dish for all sorts of grilled meats and casseroles. Do you know how to peel & cube a mango? Margo says, "No worries, luv". Yum!!
Ingredients You'll Need
2 cups shredded white cabbage
2 cups shredded red cabbage
1/3 cup green onions, sliced
1 fresh mango, peeled and cubed
Ã‚Â½ cup walnuts, chopped coarsely
Ã‚Â¼ cup sugar
Ã‚Â½ teaspoon fresh ginger, grated
Ã‚Â¾ cup rice wine or cider vinegar
Salt & pepper to taste
In a medium bowl, combine cabbage, green onions, mango and walnuts.
In a small bowl whisk together the sugar, ginger and vinegar. Season with salt and pepper. Add to cabbage mixture and toss. Serve cold or at room temperature.
