Ingredients You'll Need
1 lb. flour, 1/2 tsp. salt, 1/2 lb lard, 1/2 cup sugar, splash of beer, 2 egg whites, fruit jelly or preserves
Directions
Mix all ingredients (except the jelly/preserves and the egg whites). Once the dough is mixed, leave out in covered bowl with towel for 1/2 hour. Pre-heat oven to 350 degrees.
Roll the dough out on a board about the consistency of a tortilla and cut with a 2-3" diameter circle cookie cutter or glass.
Fill with the jelly/preserve, just a dab and fold the dough over and pinch the ends to close.
Place the empanadas on a cookie sheet and brush liberally with the egg whites.
Bake until lightly browned then roll in bowl of sugar while warm. The next step is very important!
Oatmeal Raisin Cookies
1 well-beaten spirit
7 dozen ugly and inedible empanadas
1 reliable automobile
1 Visa or Mastercard (not over the limit)
1 set of directions to Mrs. B's
Throw 7 dozen inedible empanadas in the trash, look for car keys and rush like hell to the nearest Mrs. B's for replacement cookies. Place in party bags for the cookie exchange and try to pass them off as your own.
