Why I Love This Recipe

Marian gave us a bright, delicious version of canned shrimp salad listed in Grandma's cookbook which is much healthier than the original

Ingredients You'll Need

2 ounces pre-cooked (50-60 per/lb) shrimp, minced
Greek Yogurt Vegenaise used in place of mayonnaise
Chopped green onion
Chopped cucumbers
Season with dill weed, Penzey's Garden Salad spice, Celery Salt and seed
Heirloom tomatoes
Mixed greens


Combine shrimp with yogurt, onion, cucumber, and Vegenaise/or mayonnaise

Season the salad prior to mixing with: dried dill weed, celery seed, celery salt, pepper

Very large heirloom tomatoes cut into quarters,on a bed of mixed greens and used a minimal amount of vinaigrette

Pairs Well With

Celery sticks, bread and wine
