Marian's Spare Ribs with Vegetables - Updated

While the original recipe was used by Marian she suggests covering the dish to retain moisture, using beef broth, and using St Louis ribs
Ingredients You'll Need
4 lbs spareribs or alternatively St Louis ribs for more flavor
8 potatoes, cut lengthwise
8 carrots, cut lengthwise
2 cups celery cut in cubes
2 Tbsp parsley shredded
2 cups boiling water or beef broth
2 Tbsp salt
scant amount of flour
pepper to taste
Directions
Lay spareribs over vegetables in a roasting pan
Add water, dredge with salt, pepper and flour
Roast from 1-1 1/4 hours covered to retain moisture
Serve with parsley sprinkled over
Bake at 325 degrees
