Why I Love This Recipe
A friend of mine shared this recipe on Facebook a few months ago. I love Tomatoes and I had a barbecue I needed to bring a dish to that weekend so I decided to try it. Not only was it ridiculously easy but it was equally as good. Everyone at the barbecue loved it and it has been my barbecue staple this summer. Of course it is scrumptious, and less healthy, with bread, but it is also pretty good and a pretty healthy all by itself.
Ingredients You'll Need
2 Tablespoons Fresh Basil, Chopped
1 Tablespoon Granulated Sugar
1 to 1/2 teaspoon Garlic Salt
1 to 1/2 teaspoon Seasoned Salt
1/2 teaspoons Ground Black Pepper
3/4 cups Olive Oil
1/2 cups Red Wine Vinegar
3 whole Scallions or Red Onions, diced
6 Tomatoes, cut into wedges - I like to use a variety of tomatoes
Directions
Whisk together all the ingredients except the tomato wedges
Add the tomatoes and toss to coat
Allow to marinate at room temperature for a couple of hours, stirring every now and then
Serve with lots of bread to soak up all the yummy marinade
