Who doesn't like blueberries?!

Ingredients You'll Need

1/2 Cup room temperature butter
3/4 Cup sugar
1/4 tsp salt
1 tsp vanilla
2 large eggs, separated
1 1/2 Cup flour + 1 Tbsp
1 tsp baking powder
1/3 Cup milk
1 1/2 Cup blueberries (fresh or frozen)
3/4 Cup cream cheese
2 Tbsp butter, room temp
2 tsp fresh lemon zest
1/2 tsp vanilla
2 1/2 Cup confectioner's sugar


Pre-heat oven to 350, grease and flour 8"x8" pan

Cream 1/2 C. butter and 1/2 C. sugar, add in salt and vanilla. Separate eggs, saving whites, and add yolks to mixture and mix well.

In a separate bowl, combine flour and baking powder. Slowly mix in with egg mixture, alternatively adding in milk, until combined.

Coat berries with flour and add to batter

In a separate bowl mix egg whites until soft peaks rise, add 1/4 C sugar a spoon at a time until stiff peaks. Fold into batter.

Pour batter into greased and floured pan, sprinkle with 1 Tbsp sugar, and bake for approx 50 minutes or until browned/toothpick tested

Cold milk, coffee or tea; breakfast;
