Mary Ann's Old Fashioned Bread Stuffing/Oyster Stuffing

To make oyster dressing, use some of this regular dressing, add freshly shucked oysters.
Ingredients You'll Need
4 cups diced celery
1 cup chopped onion
1 cup butter
4 quarts bread cubes. Use a variety of bread, 1/2 of which is cornbread.
1 TBS salt
2 tsp poultry seasonings
1/2 tsp dried sage (1 TBS fresh)
salt & pepper
1&1/2 - 2 cups hot water or broth
Directions
Saute the celery and onion in butter until onion is transparent.
Mix with cubed bread.
Add water or broth - enough to mositen.
