Mashed Garlic Creamy Cauliflower

Why I Love This Recipe

A few years ago I made this for dinner along with a healthier version of salisbury steak with a mushroom sauce. I told Jack after we had started eating that it wasn't potato. He couldn't figure out what it was but kept commenting how great it was. I wasn't a huge cauliflower fan myself until I started messing around with it mashed.

Ingredients You'll Need

1 head of cauliflower - cut up into florets
2-3 spoonfuls of minced garlic
1-2 TBSP olive oil
2-3 TBSP cream cheese (full fat, reduced fat, or no fat works)
1/4 c parmesean cheese
Salt/Pepper to taste

Optional add-ins or substitutes:
Ricotta cheese or Greek yogurt for cream cheese
Almond milk or milk

To decrease calories withhold a TBSP of oil, parmesean cheese, and use fat free greek yogurt


Steam cauliflower florets.

While steaming saute garlic in olive oil.

Use a blender or food processor and gradually add ingredients to puree together.

If too thick add in a little milk.

Salt/pepper to taste.

If making in advance just put in an oven safe dish and warm in oven at low setting until ready to eat.
