Why I Love This Recipe

This makes the lunchroom a simple snap! A true rainbow of delight!

Ingredients You'll Need

1/4 tbsp. olive oil
2 tsp. red vinegar
1 tbsp. lemon juice
2 garlic cloves
salt & pepper

50 g (1/2 c) yellow pepper
50 g (1/2 c) chick peas
50 g. (1/2 c) cucumber diced
50 g (1/2 c) cherry tomatoes
25 g (1/4 c) lentils
1/2 c parsley


whisk together oil, vinegar, lemon, garlic and salt and pepper. Pour dressing into bottom of 16 oz mason jar.

layer chopped peppers, chick peas, cucumbers, lentils and cherry tomatoes in jar. Refrigerate until ready for consumption.

dump jar contents into a bowl, toss and enjoy!
