Me Gusta Ep. #1: Grandma's Entomatadas

Why I Love This Recipe
On a trip to Mexico, I had my first encounter with Entomatadas. I was staying with my grandparents and the most important part of our day, was when we sat down to eat! It was about 10 pm when I had my first Entomatada, and it was glorious! The rich tomato base sauce and creamy cheese filling are incredibly indulging that it makes you want to eat 10 of them!
Ingredients You'll Need
Ingredients (Makes (4) Entomatadas):
2 large roma tomatoes
1 garlic clove
1/2 teaspoon of salt
1 tablespoon olive oil
4 large corn tortillas
1/2 cup of Queso Fresco (Mexican Cheese)
1 cup of Tillamook Vintage White Extra Sharp Cheddar Cheese or Monterey Jack
(Highly recommend the Tillamook)
1/2 cup of sour cream or Crema Fresca
Slices of fresh avocado
