"An alt to spaghetti and meatballs"

Serves 3-4 | Prep Time 15 mins | Cook Time 30 mins

Why I Love This Recipe

I was craving meatballs and didn't want to have pasta in the middle of the week, so I decided to pair with polenta and its creaminess worked perfectly!


Ingredients You'll Need

1 pound ground beef
2 eggs, beaten with 1/2 cup milk
1/2 cup grated pecorino or parmesan
1 cup panko or breadcrumbs
1/2 onion, finely chopped
3 cloves garlic, minced
1/2 teaspoon dried oregano
1 teaspoon salt
freshly ground pepper to taste
cayenne pepper to taste
1/4 cup minced fresh flat-leaf parsley or basil
1/2 cup polenta


Directions

start cooking polenta according to the instructions on the back of packaging. Important to get started on this first, as it takes at least 45 minutes to cook properly


Mix the beef, egg mixture, cheese, panko, onion, garlic, oregano, salt, pepper, and cayenne in a bowl using your hands


form into golf ball sized meatballs and bake at 350 for 30 mins


While they are baking add half a tbsp of butter as well as grated pecorino and cayenne pepper to taste to the polenta


Serve meatballs on top of polenta. Add sauce of choice and garnish with basil or parsley
