Why I Love This Recipe

Broccolini is a hybrid vegetable, a cross between broccoli and Chinese broccoli, and it has a more delicate, sweeter flavor compared to its parent varieties.


Ingredients You'll Need

1 pound ground turkey
2 bell peppers, diced
2 cups fresh spinach, chopped
1 bunch broccolini, trimmed and chopped into bite-sized pieces
4 ounces feta cheese, crumbled
2 tablespoons olive oil
2 cloves garlic, minced
1 medium onion, diced
Salt and pepper to taste


Directions

Heat a large skillet over medium heat and add the olive oil.


Sauté the diced onion and minced garlic for 1 minute until they become fragrant and the onion is soft.


Add the ground turkey to the skillet, breaking it apart with a spoon or spatula, and cook until browned, about 7-8 minutes.


Season the turkey with salt and pepper to taste.


Add the diced bell peppers and broccolini to the skillet and cook for approximately 5-7 minutes, until the vegetables begin to soften.


Stir in the chopped spinach and cook for an additional 2-3 minutes, just until wilted.


Top with crumbled feta cheese and let it slightly melt into the dish.


Serve hot as a standalone meal or over rice or quinoa.
