Meemom's Spinach And Stuffing Casserole

Why I Love This Recipe
This recipe originally comes from my mother-in-law. She is not really a cook, but she is famous for this one dish. She originally got it from Aunt Ruth who got it from a co-worker at Fortress Press in center city Philadelphia many many moons ago. My favorite memory of this dish is when Meemom brought ham dinner with all the trimmings to help us welcome our new baby home from the hospital. Hope you like it.
Ingredients You'll Need
1 box frozen chopped spinach, prepared per pkg directions
1 can mushroom soup
1 T chopped onion
1/4 C butter
3/4 C cheddar(I usually don't use)
1 beaten egg
1 C stuffing mix
3/4 C stuffing mix for the top
Directions
Mix together and put in greased casserole. Sprinkle stuffing on top. Bake at 350 for 30 minutes.
*try adding 8oz cream cheese
